The recipes are easy to follow and use accessible ingredients. The recipes are healthy yet flavorful. I like that the author gives recommendations of other recipes in the book that will go well together. I also appreciated the detailed directions once the ingredients are in the pot.     Very good! I bought an instant pot and it sat for months on the floor of the dining room. I was a bit afraid of it to be honest. The kids are both off at college and I needed to switch gears and cook smaller healthier meals for just two. This book has helped me do that. The recipes are appealing and things we eat. They have normal ingredients that we already have or can easily pick up at the market. Because the meals are ready so quickly it cut down on the urge to head out for a meal which was Very good! I bought an instant pot and it sat for months on the floor of the dining room. I was a bit afraid of it to be honest. The kids are both off at college and I needed to switch gears and cook smaller healthier meals for just two. This book has helped me do that. The recipes are appealing and things we eat. They have normal ingredients that we already have or can easily pick up at the market. Because the meals are ready so quickly it cut down on the urge to head out for a meal which was starting to becoming “a bad habit” (both financially and for health reasons). There are nice step by step instructions for each recipe. There are a good variety of sides and mains. I would have loved pictures of the final results but that’s a minor nitpick. For being a "Meal Prep" cookbook, I felt like there wasn't a lot of meal prep details - the opening chapter loosely covers meal prep in general and offers a few tips for using the instant pot to help with meal prep. Most of the recipes have a little tip at the end either for advanced prep, meal prep or general cooking tips, and the meal prep tips were usually serving suggestions that didn't really seem like An okay cookbook. I found several recipes that I plan on trying in the nearish future. For being a "Meal Prep" cookbook, I felt like there wasn't a lot of meal prep details - the opening chapter loosely covers meal prep in general and offers a few tips for using the instant pot to help with meal prep. Most of the recipes have a little tip at the end either for advanced prep, meal prep or general cooking tips, and the meal prep tips were usually serving suggestions that didn't really seem like meal prep tips (ex: Chicken & Veggies tip was to swap zucchini for carrots, or choose colorful carrots). Chapter 1: Healthy Food in an Instant Chapter 2: Basics and Staples Chapter 3: Breakfast and Brunch Chapter 4: Grains, Beans, I absolutely love my Instant Pot. I have almost every recipe marked to try in this cookbook, but here is a sample of the ones I'm interested in trying: CINNAMON-APPLE STEEL-CUT OATS PUMPKIN SPICE OATMEAL VEGETABLE QUINOA TABBOULEH SPANISH RICE YELLOW RICE WITH PEAS AND CORN GREEN PEA AND PARMESAN RISOTTO MANGO STICKY BROWN RICE MEXICAN REFRIED BEANS STICKY NOODLES WITH TOFU SMOKED PAPRIKA LENTIL SOUP POTATO-CORN CHOWDER CHICKEN TORTILLA SOUP KUNG PAO CHICKEN BALSAMIC CHICKEN WITH VEGETABLES AND POTATOES TERIYAKI CHICKEN AND RICE BARBACOA BEEF I really enjoyed this cookbook and look forward to using it a lot! I do wish it had more pictures of the finished dishes, but in saying that, the variety and the simplicity of the recipes make up for the lack of pictures. A must buy for Instant Pot owners!

    This is the most complete meal prep book I’ve seen for using an Instant Pot - with regular family meals. Read through the recipes and found several that I’d like to try. From simple potatoes cooked quickly to fail-proof hard boiled eggs to steel cut oats to chili, a true variety. The recipes are ones that are go-to for many families, now made simpler with the ease of the Instant Pot. I’ll be referencing this in the coming days! My copy was complimentary from the publisher.

    I have been struggling with the best way to meal prep for quite some time and I love and adore my Instant Pot and use it constantly, so this book was a great combination of the thing I wanted to learn more to do while using my favorite tool to do it. I was super happy to see that there were nutritional breakdowns, but the cookbook went even further and also indicated on each recipe if it met the needs of a specialized diet. Definitely helpful when planning for more than just myself.

The introductory and how-to sections of the book (~13% of the content) cover ingredients, ingredient prep, cooking, and use of the instant pot. The recipes in the following chapters are arranged in chapters: Basics & Staples, Breakfasts & Brunch, Grains Beans & Veggies, Soups Stews & Chilis, Seafood & Poultry Mains, Beef & Pork Mains. All of the recipes include ingredients lists, preparation instructions, cooking instructions, and yields. The instructions are clear and easy to follow and the dishes are made with easily sourced ingredients. The prep instructions are clear and easy to follow. The ebook format has a handy interactive table of contents as well as interactive links and references throughout. Possibly worth noting for Kindle Unlimited subscribers. This title is available in the KU subscription to download for free. One small quibble with the book. There aren't very many pictures of the prepared dishes. The photographs which are included however, are really clear and well done. Four stars, well written and full of tasty healthy recipes. The sections are as follows: Healthy Food in an Instant Basics and Staples Breakfast and Brunch Grains, Beans, and Veggies Soups, Stews, and Chilis Seafood and Poultry Mains Beef and Pork Mains In the first chapter I was kind of impressed with doing rice in the I have recently started using my Instant Pot more and of course, I am always interested in finding new and good recipes. The Healthy Meal Prep Instant Pot Cookbook by Carrie Forrest is a good resource for finding those recipes I am looking for. The sections are as follows: Healthy Food in an Instant Basics and Staples Breakfast and Brunch Grains, Beans, and Veggies Soups, Stews, and Chilis Seafood and Poultry Mains Beef and Pork Mains In the first chapter I was kind of impressed with doing rice in the slow cooker, 8 minutes, I have a rice cooker and it takes longer than that and we know that cooking rice on the stovetop takes considerably longer. I always find in trying to time all of the meal that I am always finding that the rice takes the longest to prepare. Hard-boiled eggs in the Instant Pot? oh yes, and it is great! In mine, it takes a cup of water, the eggs and 8 minutes later you have perfect hard boiled eggs. Plus there is no green/gray ring around the yolk! Love it! With a lot of the recipes, there is, of course, prep work, you may have to saute some of the ingredients first and then cook in the pot. My favorite section is the soups and stews. Although I do love to cook soup on the stovetop all day sometimes you just need it quicker. Making broth with leftover chicken and bones is a must. The best broth you can have. There are 75 healthy recipes that are perfect for the home cook who does not want to spend a lot of time cooking or the cook who just wants a great meal to serve. Some of the recipes include Hearty Beef Chili, Lemon Piccata Chicken, Chocolate- Banana Quinoa Breakfast Bowls, Sweet Potatoes and Vegetable Lo Mein among others. Easy to read and follow, with tips to help in the cooking process. Plus the recipes will let you know if they are gluten-free, vegan, freezer friendly, one pot or dairy free. Very helpful. So if you have had your Instant Pot for awhile or a newbie, I highly recommend thing cookbook! I love mine!

I have used my crock pot initially, but now have switched to an Instant Pot, which cuts down on cooking and prep time even more. I love the ability to go shopping once a week or even only a couple of times a month, prepping most of the meals on the weekend and during the week having time to spend with family and still have home-cooked meals and healthy lunches available. I recommend this book to any busy mom that has an instant pot and wants to maximize its use by prepping meals. You will absolutely love this approach to cooking and this is the perfect book to get you started. The recipes cover a wide variety of approaches from totally American, to exotic spin to new even to an experienced foodie. The recipes have clear ingredient lists and I still learned valuable things about efficient meal planning from this book. A very useful book to anyone, new or experienced, in meal prepping.     Love this IP cookbook. Basics and staples and the cooking times chart do a much better job than the other IP cookbooks that I have. I have only made one recipe so far so can’t vouch for the accuracy of all the recipes but had no issues with the one I used. Highly recommend.

If you need to dispose of additional weight, this cookbook is extraordinary and the direct instructions on prepping the meals is so helpfully. I have tried quite a few of the recipes in this cookbook and every one were extremely tastey. I preferred this cookbook without a doubt.

    This is a great addition for Instant pot cooking. Clean eating and meal prep made easier with Instant Pot. I like that there is an “in your pantry” area for the staples you need to have on hand.
